It’s official, the health bug has bit me. I’ve become absolutely obsessed with the girls at Tone it Up , Jeff thinks I’ve joined some weirdo workout cult and let’s be honest I did drink the
Kool-Aid Bombshell Spell Apple Cider Vinegar. After a few months of feeling lethargic, apathetic and overall just “down” for no apparent reason, I decided it was time to make some changes. I talked before about reading “The Happiness Project” (I highly recommend it) but as much as I love reading it isn’t enough to make a profound life change or even attitude change. So I’ve been trying to live more healthfully.
It’s funny how surprised everyone (including me) seems to be when eating
right better and exercising leads to feeling better…it’s like…”Okay, this should have been obvious”. I’ve been trying to focus on nourishing my body instead of what I need to cut out. Before I prepare a meal/snack I think to myself “What should I eat that will give me the nutrients and energy to make it through the rest of the day?” Sometimes my answer is hands down an iced soy mocha from my good old bestie Starbucks but more and more often I’ve been leaning towards real food, and I don’t just mean pizza and frozen bean burritos. One of my favorite new recipes HAS to be the protein pancakes featured on Tone it Up. They are quick and easy and fast delicious (I’m actually eating one with chocolate chips in it as I write this post).
Protein Pancake Recipe (for one):
3 egg Whites
1 scoop vanilla protein powder (Perfect Fit is the suggested brand)
1 mashed up banana
1 tablespoon vanilla almond milk
1. First I blend all of my ingredients together in my handy dandy blender (I use the “mix” setting). You could definetly do this step by hand but I prefer a blender to get all of the banana chunks perfectly smooth.
side note: The recipe calls for egg whites NOT whole eggs which is a key point I didn’t take note of the first time I made these yummy treats…which meant that I had a really weird breaded protein egg scramble that wasn’t NEARLY as delicious as the pancakes you get when you use egg whites (ask Jeff…he was choking it down).
2. Pour batter into a frying pan and allow to cook on medium (until pancake batter begins to bubble). Sometimes I will toss in some chocolate chips or blueberries or flax seeds at this point.
3.Flip over your pretty little pancake, if it breaks…no big deal (it still tastes delicious).
4. Allow Your pancake to cook for 3-5 more minutes.
5. Serve with peanut or almond butter, agave nectar, maple syrup or plain with fresh berries on top (my favorite).
I don’t even like regular pancakes and these pancakes have become my new favorite breakfast food (even higher ranking than cinnamon toast crunch).
In terms of exercising…Jeff and I have been running like little hamsters on a wheel to prepare for the “Seawheeze” Half Marathon in august. Jeff won’t admit it but I think he’s actually starting to enjoy running or at least not completely despise it (Winning! Oh gosh I sound like that crazy Courtney girl from the Bachelor a few seasons ago…sorry bout’ it).
Now that I’m officially done with finals I’m off to go lay in the sun and read whatever I please. Summer has officially started…until Monday when Summer quarter begins.
